Many couples are now offering an alternative to fruit cake
i.e. sponge or madeira. However, it is necessary to note that
you only get approximately half the amount of portions than
you would from a fruit cake. It may be wise therefore to add
a cutting cake (a cake which is covered in marzipan and sugarpaste
- no decoration) for the caterers to cut and hand out as an
alternative. Further, a cutting cake can be included where
the design of the cake is only appropriate to a fruit cake.
Please note that these portions are approximate, as it is
dependent on the caterers/person cutting the cake. Traditionally
wedding cake is served in 2.5 cm/1 inch square portions. As
a guide hexagonal, octagonal shapes yield similar portions
to square, whereas heart, petal and oval yield similar portions
as to round cakes.
